Triple Chocolate Pecan Brownies

You can serve triple chocolate pecan brownies with chocolate sauce, thick cream or ice-cream. Don’t over bake these brownies or they will become cake like and dry. Preparation time is less than 30 minutes. Cooking time is 30 minutes to 1 hour.


Makes 12 brownies.


Ingredients: 


3 eggs beaten


75g/3oz pecan nuts broken into pieces 


200g granulated sugar 


1 teaspoon Baking powder 


200g unsalted butter 


150g maida (flour) 


1 teaspoon vanilla extract 


220g/7oz plain chocolate with 70% cocoa solids broken into pieces 


75g/3oz milk chocolate broken into chunks


 
75g/3oz white chocolate, broken into chunks 

  Instructions
 

 




· Take the plain chocolate and butter together in a bowl and melt it gently over a pan of hot water. Stir occasionally.


· Once chocolate and butter have melted, remove the bowl from heat and cream together sugar, beaten eggs and vanilla extract.


· Sift flour, baking powder and fold in the mixture.


· Add pecan nuts and chocolate pieces. Do not over mix.


· Take a greased baking tin of 20cm/8in and pour the mixture into it.


· Preheat oven to 180 degree and bake the tin for 30-35 minutes until the top is firm but the center would be soft when lightly pressed.


· Leave the brownies to cool and then cut them into squares.


· While serving you can warm the brownies in the microwave or warm in the oven for a few minutes.


· You can serve the brownies with extra thick cream or ice-cream.
