Chocolate Cherry Brownie With Cherry Chocolate Sauce

Preparation time is less than 30 minutes. Cooking time 10-30 minutes


Ingredients: 


For the chocolate cherry brownies:


100g/3˝oz canned cherries, stones removed, drained 


110g castor sugar 


1 tbsp milk 


110g unsalted butter 


110g maida (flour) sifted 


45g/1ľoz cocoa powder  


2 Eggs 


For the cherry chocolate sauce:


150ml/Ľ pint double cream


1 tbsp caster sugar


 
50ml/2fl oz cherry juice (from can of cherries)


 
2 tbsp cocoa powder


 
Icing sugar, to dust

  Instructions
 

 




· To make the brownies, take the butter and sugar and mix them together till they are light and fluffy.


· Whisk the eggs until thick and then gradually fold in the flour, cocoa powder and milk.


· Stir in the cherries.


· Take a greased square cake baking tin of 23cm/9in and pour half of the mixture into it.


· Preheat oven to 180 degree and bake the tin for 10-12 minutes until the top is set.


· Test the cake by inserting a fork in the center. The fork should come out sticky but if the brownie is not ready then raw mixture would be sticking to it.


· If the raw mixture sticks to the fork then put the brownie in the oven for 3 more minutes. If the brownie appears a little wet, it would solidify a little on cooling, so if it appears a little wet, it is ok.


· Leave the brownies to cool and then cut them into squares.


· For the cherry chocolate sauce, place all the ingredients except icing sugar into a small pan and heat gently, stirring frequently until a smooth sauce is done.


Pour the cheery chocolate sauce over the brownie and dust it with icing sugar and it is ready to serve.
